Keto Paneer Shashlik

Recipe Ingredients:
1 lbs Paneer/ cottage cheese cubed 1 large green Bell pepper 1 large red bell Pepper 1 large red onion 1 teaspoon Coriander seeds 1 teaspoon Cumin seeds 1 chipotle pepper 1 inch Cinnamon 1 tablespoon yogurt 1 teaspoon dry mango powder (optional ) 5 Mint leaves 1 inch Ginger Wooden skewers 1 teaspoon Salt 1 teaspoon Turmeric powder.

Prepare paneer into 1 inch cubes Cut Bell pepper and onion into 1 inch squares Prepare powder using Coriander seed and Cumin seeds. To prepare marinade soak chipotle pepper in water and microwave for 30 seconds. Make paste along with ginger and mint leaves. In separate bowl mix yogurt, ginger +mint +chipotle paste, coriander +cumin powder.Add salt, turmeric powder, mango powder to the marinade. Marinate paneer cubes and bell pepper, onion for 1/2 hr. Thread it on sodden skewers. Place griddle on the stove and add oil, when smoking hot add multiple skewer and cook for 1 min each side. Paneer shashlik is ready enjoy with coriander mint dip.
