Keto Mcgriddle

INGREDIENTS

Pankcakes

1/2 cup plus 1 tbsp almond flour

1/2 cup full fat cream cheese

4 eggs

1/2 tsp cinnamon

1 tsp granulated sweetener (optional)

cooking spray

Filling

4 eggs

4 sausage patties

4 slice cheddar cheese

salt & pepper to taste

sugar-free maple syrup

Equipment

frying pan/griddle

Pancakes

Mix all ingredients with a hand blender or in a blender.

Heat a pan/griddle over medium-low heat. place egg rings on pan to

heat them up. Once heated, spray egg rings and pan with cooking

spray. Pour batter into each ring and stop just below the top. After

cooking for ~2 minutes, remove the rings. Turn over once the centre

begins to bubble. Be careful when flipping as the batter isn’t quite

set yet. However, don’t worry if you spill some batter while you flip!

Cook until cooked throughout.

Eggs

Heat a pan/griddle over medium-low heat. place egg rings on

pan/griddle to heat them up. Once heated, spray egg rings and pan

with cooking spray. Crack an egg into each egg ring. Poke the yoke

to break it and add salt and pepper to taste. After ~1-2 minutes

remove the rings and continue cooking the eggs. Once lightly

browned on the bottom, flip the eggs over. Be careful when flipping

as the eggs are still runny inside. However, don’t worry if you spill

some while you flip! Once cooked to your likeness, remove eggs

from the stove.

Sausage

You can buy precooked sausage patties or cook your own- just make

sure they are approximately the same size as your egg rings

Assembling the Sandwich

microwave for 15-30 seconds if cheddar cheese doesn’t melt. Top with maple syrup to taste! (I used ~1 TB per

sandwich)
