1 avocado ripe
1 clove garlic
½ cup fresh basil leaves
1 Tbsp lemon juice 15 mL
2 Tbsp extra virgin olive oil 30 mL
Water as needed
Salt and pepper to taste
Combine the above ingredients in a blender until smooth.
For the Nest
1 teaspoon of olive oil or avocado oil
1 cup Green giant riced veggies cauliflower medley (3g net carbs per cup)
1 Tbsp of avocado pesto
Heat the olive oil in a pan, add veggies and let cook for about 5 minutes, stir in the pesto and then create an opening in the veggies (for the egg). Crack the egg into the opening and let cook to desired consistency.
