Oven preheat 400
Melt 4 tablespoons of butter
Mix together:
1 cup crushed pork rinds
1 teaspoon garlic powder
1/2 teaspoon thyme
1 teaspoon smoked paprika
1 teaspoon crushed red pepper
1/2 teaspoon black pepper
1/2 teaspoon salt
Set up baking rack on top of foil lined cookie sheet
Spray rack w olive oil
Set up two bowls – 1 with melted butter, 1 with dry ingredients (best to do 1/2 at a time for dry ingredients so they stay dry)
One piece at a time, dip chicken (3 lbs) in butter, then roll around in coating. Put on rack.
Bake for 45 min.
Eat fresh.
