Keto Barbacoa Mexican Pizza

Fat Head Dough Ingredients

  • 1 1/3 cup almond flour
  • 2 tablespoons baking powder
  • 1 tsp dry oregano
  • 8 oz cream cheese
  • 2 eggs
  • 12 oz (3 cups) part skim mozzarella, shredded
  • 24 slices pickled jalapenos

Keto Barbacoa Ingredients

  • 3 lbs brisket
  • 1 tablespoon onion powder
  • 0.5 tablespoon garlic powder
  • 1 tablespoon chile powder
  • 1 tablespoon smoked paprika
  • 0.5 tablespoon cayenne
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Keto Barbacoa Instructions

  • Cut brisket into 2-3 large chunks
  • Brown brisket in pot that can go in oven and/or pressure cooker
  • Add water just up to edge of meat
  • Add all seasoning
  • Braising instructions: cover pot and bake in oven at 300 for 3-4 h or until fork tender
  • Pressure cooker instructions: cover and bring pot up to pressure, cook for ~1 h or until fork tender
  • Remove cooked meat and chop or shred
  • Season with salt and pepper to taste

Fat Head Dough instructions

  • Combine Almond flour, baking powder, oregano, and salt in a bowl
  • In separate bowl combine mozzarella and cream cheese
  • Microwave cheeses for 40 seconds, stir
  • Microwave cheese for 20 seconds, stir
  • Microwave cheese for final 20 seconds, stir to achieve a well mixed ball of cheese
  • Add eggs to cheese and keep mixing until it incorporates
  • Add dry ingredients and keep mixing until a sticky dough forms
  • Place dough in plastic wrap in the fridge for 30 mins

Pizza Instructions

  • Pre-heat oven to 425 F
  • Cut two pieces of parchment paper to the size of a baking sheet
  • Roll out chilled dough between parchment to size of baking sheet
  • Cut dough into 8 pieces
  • Place ~1/3 cup of brisket, 2-4 jalapenos, and pinch of cheese in center of each dough rectangle
  • Roll up the edges of each dough square to create a little dough cup surrounding the filling (they’ll be pretty overfull looking, but the dough puffs out a lot in the oven!)
  • Place in oven for 15-20 minutes until golden brown (mine took 18 mins)
  • Cool for 5 mins and the enjoy!
